On Shelton's estate, several varieties of vitis vinifera grapes are grown: Cabernet Franc,Cabernet Sauvignon, Chardonnay, Merlot, Malbec, Tannat, Petit Verdot, Riesling, Sauvignon Blanc, and Viognier. All of the varieties of vitis vinifera grown at Shelton Vineyards utilize bud wood of European origin grafted onto Native American rootstocks to create a more disease resistant vine.

In 1994, brothers Charlie and Ed Shelton purchased at auction the land on which Shelton Vineyards sits. Although they had no firm plans for the future of the property, the land is located just a few miles from where the two brothers grew up. The groundbreaking ceremony was held June 23, 1999. The winery is a 33,000 square-foot building designed by well-known North Carolina architect, Ray Troxell. This was his first time designing a winery, and the spectacular result speaks for itself.
